Fairy cakes -- The top of the cakes are normally cut off and placed back in two pieces like wings Hence the name Fairy cake


Victoria sponge is named after Queen Victoria who had a slice of sponge cake with her afternoon tea

A mind of knowledge this lady lol Victoria Sponge also has strawberry jam in the middle, perhaps her gardeners grew lots of strawberrys at her home on the isle of wight and the cook made lots of jam from them. * +

My nan use to make rock cakes and they were lovely yumyum instead of creaming butter with sugar, mixing eggs in slowly then fold in the flour as you wld do for victoria sponge or fairy cakes ... Butter n flour wld be mixed together then sugar, fruit n eggs n a little milk then spooned onto a baking sheet and when baked looked like small rocks but tasted lovely * +

Ow times ave changed i remember ma getting out the paperback be ro book and looking up the receipe on ow too make jam tarts. Filled and open. And at christmas out it would come again too make the mince pies and home made christmas cake. * +
